Dice the apples into small pieces after removing the core. Don’t wait too long to avoid browning.

Put the apple pieces, water, and honey into a large pot. Turn up the heat to bring everything to a boil, then lower it to simmer. Cook gently for 15 minutes while pressing the apples occasionally to release more juice.

Remove the pot from the heat and let it cool completely. Use a strainer to press the mix into a bowl or pitcher, squeezing the apples to get the syrup out. Discard the solid bits once done.

Spoon about 2-3 tablespoons of syrup into each glass. Pour in soda water or sparkling water, toss in some ice cubes, and give it a gentle stir.
