In a big skillet, cook the sausage on medium heat until it's no longer pink. Take it out and drain extra grease.

Put the sausage back in the pan, toss in the flour, and mix it well to coat everything evenly.

Pour in the milk bit by bit while stirring over medium heat until it's thickened the way you like.

Season with salt, pepper, and, if you like, a sprinkle of cayenne or red pepper flakes.
