Gooey Pecan Cobbler (Print Version)

# Ingredients:

01 - 2 cups pecans, chopped or left in halves.
02 - 1/2 cup melted butter.
03 - 1 cup granulated sugar.
04 - 1 box of chilled pie crusts.
05 - 2 1/2 teaspoons of vanilla extract.
06 - 6 eggs, lightly whisked.
07 - 2 1/2 cups of dark Karo syrup.
08 - Non-stick butter cooking spray.

# Instructions:

01 - Set your oven to 350°F to warm up.
02 - Spray a 13x9 glass dish with a butter-flavored non-stick spray for an easy cleanup.
03 - Stretch the first pie crust into a 13x9 shape. Pinch any splits to seal them up.
04 - Grab a big bowl and combine the corn syrup, melted butter, vanilla, sugar, and eggs.
05 - Gently stir in the pecans to the mixture.
06 - Pour half the filling over the crust, lay the second crust across the top, and then add the rest of the filling over it.
07 - Pop it in the oven for 40 to 50 minutes until it’s set.
08 - Let it cool completely before slicing and serving.

# Notes:

01 - Easier to share than a regular pie. Light syrup works, but dark is richer in taste.
02 - Filling should jiggle just slightly when done. Cool completely for the best texture.
