Garlic Parmesan Potatoes (Print Version)

# Ingredients:

01 - 2 tablespoons olive oil.
02 - 1 teaspoon dried dill.
03 - 1 tablespoon fresh parsley, finely cut.
04 - 1/3 cup Parmesan, shredded fresh.
05 - 1 teaspoon Italian herbs.
06 - 4 garlic cloves, chopped finely.
07 - 3 pounds smaller red or Yukon Gold potatoes.
08 - 1/2 teaspoon pepper.
09 - 3 tablespoons butter, melted.
10 - 1/2 teaspoon salt.
11 - Extra grated Parmesan for topping.

# Instructions:

01 - Leave small potatoes as they are, while bigger ones should be sliced in half.
02 - Lightly coat the inside of a 6-quart slow cooker with oil and toss in the potatoes.
03 - Scatter the Italian herbs, dill, Parmesan, salt, and pepper over the potatoes.
04 - In a bowl, stir together the melted butter, chopped garlic, and olive oil.
05 - Drizzle the mixture evenly over the potatoes.
06 - Set it to HIGH for 3 hours, or use LOW and cook it for 5 to 6 hours.
07 - Before serving, sprinkle parsley and extra Parmesan on top.

# Notes:

01 - You don’t have to stir it while it’s cooking.
02 - Add crushed red pepper or cayenne for extra spice.
03 - Double the ingredients if your cooker is big enough.
04 - Can be refrigerated for up to 3 days.
