Leave small potatoes as they are, while bigger ones should be sliced in half.

Lightly coat the inside of a 6-quart slow cooker with oil and toss in the potatoes.

Scatter the Italian herbs, dill, Parmesan, salt, and pepper over the potatoes.

In a bowl, stir together the melted butter, chopped garlic, and olive oil.

Drizzle the mixture evenly over the potatoes.

Set it to HIGH for 3 hours, or use LOW and cook it for 5 to 6 hours.

Before serving, sprinkle parsley and extra Parmesan on top.
