Garlic Mushroom Pasta (Print Version)

# Ingredients:

→ Base

01 - 1/2 medium onion, finely diced
02 - 8 ounces cremini mushrooms, thinly sliced
03 - 4 ounces pasta, uncooked
04 - 3 cloves garlic, finely minced
05 - 1 tablespoon olive oil
06 - 3 tablespoons butter, split
07 - 1/2 teaspoon Dijon mustard

→ Sauce

08 - 1/2 cup parmesan cheese, freshly grated
09 - Salt and black pepper, to your liking
10 - 1/2 teaspoon freshly squeezed lemon juice
11 - 2 tablespoons parsley, freshly chopped
12 - 1/4 cup white wine, vegetable broth, or chicken broth
13 - Zest of half a lemon

# Instructions:

01 - Boil a pot of salted water, cook pasta till it's just firm.
02 - In a skillet, caramelize mushrooms and onions in olive oil and part of the butter for 8-10 minutes.
03 - Throw in garlic, Dijon mustard, and the rest of the butter. Stir and cook for another minute.
04 - Add wine or broth with lemon juice, let it simmer briefly.
05 - Take off the heat, mix in parmesan, parsley, and a bit of pasta water. Toss with pasta until coated.

# Notes:

01 - If doubling, mushrooms need extra time to brown.
02 - Feeds 2 for a main dish or 4 as a smaller side.
