Preheat your oven to 350°F and grease a 9x5 pan lightly.

Combine flour, sugar, salt, baking powder, baking soda, and garlic powder. Toss in 2 cups of the cheddar.

Whisk together eggs, buttermilk, and melted butter until smooth.

Gently fold the wet mixture into the dry until it’s just incorporated. Don’t overdo it! Pour into the loaf pan.

Sprinkle the remaining cheddar on top. Cover with foil, bake for 30 minutes, then remove foil and bake for another 20 minutes.

Let the loaf cool for about 10 minutes in the pan before shifting it carefully to a cooling rack.
