Fried Mac Bites (Print Version)

# Ingredients:

01 - 14 strips (284g) of bacon.
02 - 1/2 lb (227g) of elbow pasta.
03 - 2 tbsp bacon drippings or butter (30g).
04 - 2 tbsp (16g) plain flour.
05 - 1 cup plus 2 tbsp (270ml) milk.
06 - 1/2 lb (227g) shredded sharp cheddar.
07 - 1/2 lb (227g) shredded Monterey Jack.
08 - Spices: nutmeg, cayenne, garlic powder, salt, pepper.
09 - 1 cup (125g) all-purpose flour.
10 - 2 eggs, whisked.
11 - 1 1/4 cups (180g) seasoned panko crumbs.
12 - Spices: onion powder, pepper, salt.
13 - Oil for frying.

# Instructions:

01 - Fry bacon until crispy, save 2 tbsp of its fat, and chop it into small pieces.
02 - Boil macaroni for 7 minutes, make a roux with the fat and flour, whisk in milk and spices, add the cheeses, stir in bacon and pasta, cool for at least 3 hours.
03 - Divide into 36 pieces, coat them in flour, dip in egg, then roll in breadcrumbs. Freeze until needed.
04 - Fry in small batches for 4-5 minutes at 360-370°F. Drain on paper towels and serve immediately.
