Fresh mini-salad summer (Print Version)

# Ingredients:

01 - Half a pink grapefruit, peeled fully
02 - Half a ripe avocado, sliced thin
03 - 75g cooked shrimp, peeled
04 - Chopped chives, just a few sprigs
05 - 1 juicy tomato, diced into small pieces
06 - 1 yellow lemon, zest and juice
07 - 2 tablespoons of lemon mayo
08 - Pinch of salt

# Instructions:

01 - Peel the pink grapefruit completely.
02 - Peel the shrimp, toss them in a bowl, and grate the lemon zest over them.
03 - Juice the lemon, strain it, and pour it into a large bowl.
04 - Cut the avocado in slices, add it to the bowl, drizzle a little lemon juice over it, add a pinch of salt, then toss gently.
05 - Add the diced tomato to the bowl.
06 - Finely chop the chives and mix them into the bowl.
07 - Gently stir in the lemon mayo.
08 - Scoop the mix into small dishes and keep them in the fridge until you're ready to enjoy.
