Ultra fluffy blinis (Print Version)

# Ingredients:

01 - A cup of warm milk (250 g).
02 - 1 teaspoon of instant yeast or 15 g of fresh baker's yeast.
03 - A teaspoon of sugar.
04 - A cup of T55 flour (250 g).
05 - Three eggs.
06 - 2 tablespoons of melted butter or vegetable oil (30 g).
07 - 1 teaspoon of salt.

# Instructions:

01 - In a large bowl or blender jar, combine the warm milk, eggs, melted butter, yeast, and sugar. Use a whisk to mix thoroughly, or blend for 1–2 minutes if you’re using a blender.
02 - Pour in the flour and add the salt, then blend the mixture for about 3 minutes. You can also use an immersion blender. The mix should be smooth and lump-free.
03 - Transfer the batter into a large bowl, cover it with plastic wrap, and let it sit at room temperature for an hour.
04 - Preheat a non-stick skillet, lightly oil it with a pastry brush, then pour a small ladleful of batter onto the pan. Cook over medium heat for 1–2 minutes until bubbles form on the surface. Flip it over and cook for another minute or until it's golden brown.
05 - Serve the blinis warm or cold, with either sweet or savory toppings.

# Notes:

01 - Storage: Once cooled, store in an airtight container in the fridge for 4–5 days or freeze for up to a month.
02 - Reheating: Use a toaster, pan, or microwave for 15 seconds.
