Creamy fish puffs (Print Version)

# Ingredients:

01 - 1 sheet of puff pastry.
02 - 400g of white fish fillets.
03 - 1 egg yolk.
04 - 2 teaspoons of curry or colombo spice mix.
05 - 20cl of heavy cream.
06 - 30g butter.
07 - 15g of all-purpose flour.
08 - 2 tablespoons of powdered fish stock.

# Instructions:

01 - Melt butter in a pan, cook the fish pieces until they're golden brown.
02 - Mix butter and flour in a pot to create a thick paste. Stir in fish stock, cream, and spices. Cook till it thickens.
03 - Stir cooked fish into the sauce, then let it chill completely.
04 - Cut the puff pastry into circles or squares, place the filling, and seal them. Brush with egg yolk.
05 - Pop into the oven at 180°C for 20-25 minutes until they're golden and crisp.

# Notes:

01 - Best served warm or lukewarm.
02 - Works nicely with a green salad on the side.
