Slice the endives lengthwise, then into thin strips. Chop the onion and cook the sausages ahead of time. Set them aside for now.

Melt the butter in the same pan. Toss in the onion and endives, giving them a stir for about 10 minutes.

Add the sliced sausages and crème fraîche. Season to taste, then simmer for a couple more minutes.

Garnish with parsley if you'd like, then serve it warm with some bread or steamed potatoes on the side.
