Eggnog Cookies Frosted (Print Version)

# Ingredients:

01 - 1/2 teaspoon cinnamon, plus extra for garnish if desired.
02 - 1/2 teaspoon salt.
03 - 2 cups (283g) plain flour.
04 - 1/2 teaspoon nutmeg.
05 - 2 teaspoons baking powder.
06 - 1/2 cup (113g) butter, softened for frosting.
07 - 1 teaspoon pure vanilla extract.
08 - 1/2 cup eggnog.
09 - 3 cups (360g) powdered sugar for the frosting.
10 - 1/2 cup (100g) light brown sugar, tightly packed.
11 - 2 egg yolks, large.
12 - 1/2 teaspoon of rum flavoring for frosting.
13 - 1/2 cup (100g) white granulated sugar.
14 - 3/4 cup (170g) unsalted butter, softened.
15 - 3 to 5 tablespoons eggnog for mixing frosting.
16 - 1/2 teaspoon of rum extract.

# Instructions:

01 - Set oven to 350°F to preheat. In one bowl, stir together the flour, baking powder, cinnamon, nutmeg, and salt.
02 - Beat the butter until creamy with both sugars. Blend in eggnog, egg yolks, and flavorings. Gradually add in the dry mix.
03 - Scoop out dough onto lined trays using large spoonfuls. Cook for about 11-13 minutes.
04 - Let the cookies rest briefly on the tray, then move them to a rack until fully cooled.
05 - Mix together butter with powdered sugar, rum, and eggnog until it’s smooth, light, and fluffy.
06 - Spread frosting on the cookies once they’ve cooled and top with a sprinkling of nutmeg.

02 - Full-fat eggnog makes a big difference—don’t skip it.
03 - For thicker cookies, you’re able to toss in extra flour.
