Smothered Chicken (Print Version)

# Ingredients:

01 - 2 big chicken breasts, sliced in half lengthwise.
02 - Season with a pinch of salt and pepper.
03 - 1/2 cup of all-purpose flour.
04 - 1 tsp onion powder.
05 - 1 tbsp garlic powder.
06 - 1/2 tsp cayenne for spice.
07 - 1/2 tbsp paprika for color.
08 - 2 tbsp unsalted butter.
09 - 2 tbsp of olive oil.
10 - 1 medium onion, sliced thin.
11 - 1/4 cup of heavy cream.
12 - 1 tsp Worcestershire sauce.
13 - 1 cup of chicken stock.

# Instructions:

01 - Slice each chicken breast down the middle, lengthwise.
02 - Sprinkle the chicken with some salt and pepper.
03 - Combine the flour with garlic, onion powder, paprika, and cayenne. Set aside 2 tbsp of this mixture.
04 - Heat olive oil in a pan over medium-high heat.
05 - Coat the chicken pieces with the seasoned flour (not the reserved part).
06 - Sear chicken for about 5 mins per side. Flip once.
07 - Place chicken on a plate and set it aside for now.
08 - Turn the stove down to medium-low.
09 - Melt butter in the same pan, then sauté the onions. Keep cooking until they’re beautifully golden, about 15–20 mins.
10 - Sprinkle in the reserved flour, stir, and let it cook for 1 minute.
11 - Add the chicken broth and Worcestershire sauce to the pan.
12 - Stir the cream in slowly.
13 - Place the cooked chicken back in the pan. Simmer for 5 to 7 mins, or until fully cooked. Adjust seasoning as preferred.

# Notes:

01 - Swap chicken breasts for thighs if you'd like more flavor.
02 - Use less cayenne if you want it milder.
03 - Keep onions on medium-low so they don’t burn.
04 - Chicken should reach at least 165°F to be done.
