Heat up your oven to 200°C (about 400°F).

Roll your pastry into the pan and poke some holes in the base using a fork.

Chop the rhubarb into small chunks (don’t peel it) and spread it out evenly on the pastry.

In a mixing bowl, whisk the eggs, sugar, cream, and cinnamon (if you’re using it). Pour this over the rhubarb.

Put the tart in the oven and bake for roughly 30 minutes.
