Quick rhubarb tart (Print Version)

# Ingredients:

→ Dough

01 - 1 roll of shortcrust pastry

→ Topping

02 - 500 g rhubarb, washed and diced
03 - 2 eggs
04 - 20 cl heavy cream
05 - 75 g sugar
06 - 1 teaspoon cinnamon (optional)

# Instructions:

01 - Heat up your oven to 200°C (about 400°F).
02 - Roll your pastry into the pan and poke some holes in the base using a fork.
03 - Chop the rhubarb into small chunks (don’t peel it) and spread it out evenly on the pastry.
04 - In a mixing bowl, whisk the eggs, sugar, cream, and cinnamon (if you’re using it). Pour this over the rhubarb.
05 - Put the tart in the oven and bake for roughly 30 minutes.
