Dill Pickle Sloppy Joe (Print Version)

# Ingredients:

→ Sloppy Joe Mixture

01 - 1 pound ground beef, lean
02 - 2 teaspoons olive oil (extra-virgin)
03 - 1 small yellow onion, finely chopped
04 - 1/2 cup chopped dill pickles
05 - 1/4 teaspoon freshly ground black pepper
06 - 1/2 teaspoon garlic powder
07 - 2 teaspoons yellow mustard
08 - 1/2 cup ketchup
09 - 1/2 teaspoon kosher salt
10 - 2 teaspoons light brown sugar

→ For Sandwiches

11 - 2 cups grated cheddar cheese
12 - Butter (unsalted), for grilling
13 - 8 slices of thick Texas Toast or sturdy bread

# Instructions:

01 - Heat some olive oil in a big non-stick pan over medium-high heat. Toss in the beef and onions, cooking until the onions soften and the beef is fully browned. This takes about 3 minutes. Drain off the extra fat.
02 - Add ketchup, garlic powder, mustard, and brown sugar. Stir until everything's blended. Sprinkle with salt and pepper. Finally, mix in the pickles. Pour into a bowl, cover it to stay warm, and leave it aside for now.
03 - Clean out the skillet and put it back on medium heat. Spread butter on one side of each bread slice. Lay a buttered side down in the pan, pile on some cheese, add a good amount of the sloppy joe filling, top with more cheese, and place another slice of bread on top (buttered side up).
04 - Cook for about 1-2 minutes until the bottom is golden. Flip it carefully, pressing gently to melt the cheese evenly. Cook another 1-2 minutes until the other side turns golden and the cheese is gooey. Use the rest of the ingredients to make 4 sandwiches total.

# Notes:

01 - Enjoy right away with some potato chips or extra pickles if you want extra crunch.
02 - Let the sandwich sit for a couple of minutes before cutting to avoid a mess.
