Find the natural line on each date, then slice it open gently to make a pocket, leaving one side attached.

Line a freezer-friendly tray with parchment. Carefully open each date to make space for the filling.

Fill the inside of each date with a spoonful of nut butter. Add a few nuts, lightly press to close, and pop them in the freezer to firm up.

While the dates chill, heat the chocolate until it's smooth and ready to use. Let it cool a little so it coats evenly.

Take the firm dates out of the freezer. Fully dip each one into the melted chocolate using a couple of spoons for easy handling.

Sprinkle the chocolate-covered dates with some sea salt while they're still wet. Put them back in the freezer until the chocolate hardens.
