Crispy Tomato Bites (Print Version)

# Ingredients:

→ Fresh Produce

01 - 2 big tomatoes, chopped small (about 250g)
02 - 1/2 a red onion, chopped fine
03 - 2 large garlic cloves, smashed into a paste

→ Fresh Herbs & Seasonings

04 - 1/2 bunch of fresh dill, minced up (about 10g)
05 - 1/2 bunch of parsley, finely chopped (about 15g)
06 - Zest from one lemon
07 - 1/2 teaspoon of salt, or more if you like
08 - A pinch or two of black pepper

→ Dry Ingredients

09 - 85 grams of plain flour
10 - 1/2 teaspoon of baking powder

# Instructions:

01 - Chop your tomatoes into tiny pieces and toss them in a large bowl—they're your fritter base.
02 - Throw the onion, garlic, lemon zest, and all those fresh herbs in with the tomatoes. Mix in the flour, baking powder, salt, and pepper until it looks like a sticky dough.
03 - Pour some olive oil in your frying pan and warm it up on medium heat. Spoon out some batter into the pan. Let it cook till it's brown on one side, then flip and wait for the other side to get golden too.
