Warm up the oven to 180°C (around 350°F). Roll the puff pastry out on a slightly floured countertop and cut small circles out with a glass or a cookie-cutter. Cook the bacon bits in a pan over medium heat until they turn crispy and golden.

In a bowl, combine the eggs, fresh cream, grated comté, nutmeg, and black pepper.

Line a baking tray with parchment paper and place the pastry circles on it. Spread the cooked bacon evenly on the pastry bases. Spoon a bit of the topping mix onto each one. Pop them into the oven and bake for about 15–20 minutes, until they look golden and cooked through.

Take the bites out of the oven and serve either hot or just slightly warm.
