Crispy Eggplant Bites (Print Version)

# Ingredients:

01 - 1 big eggplant, skin removed and chopped into 1-inch chunks
02 - 2 tbsp of avocado oil

→ Seasonings

03 - 1 tsp of ground dried thyme
04 - 1 tsp of ground dried rosemary
05 - 1/2 tsp garlic in powdered form
06 - 1/4 tsp of coarse salt, plus a little extra for sprinkling
07 - 1/2 tsp of smoked paprika flavor

# Instructions:

01 - Let the eggplant cubes sit with salt for 15-30 mins. Wipe moisture off using some paper towels.
02 - Mix the eggplant with avocado oil and spices until it's evenly coated everywhere.
03 - Set to 400°F and cook for 18 minutes. Give it a mix halfway so everything crisps up evenly.
