Crispy Corn Fritters (Print Version)

# Ingredients:

01 - 1 egg, large.
02 - 6 tablespoons of milk.
03 - About 3 ears of corn (2 cups of kernels).
04 - 3/4 cup chopped green onions.
05 - 1 cup grated cheddar, sharp.
06 - 1 teaspoon vinegar, apple cider.
07 - 1 1/2 teaspoons salt, sea.
08 - 1 teaspoon of onion powder.
09 - 1/2 teaspoon powder for baking.
10 - 1/2 teaspoon garlic seasoning.
11 - 1/4 teaspoon of cayenne spice.
12 - 1/4 teaspoon paprika, smoked.
13 - Pepper, freshly ground, to taste.
14 - 3/4 cup of ground cornmeal.
15 - 1/2 cup plain flour, all-purpose.
16 - Oil for frying.
17 - Green onions, extra for garnish.
18 - A dollop of sour cream.

# Instructions:

01 - Beat the egg with the milk. Toss in the corn, scallions, grated cheese, and vinegar.
02 - Mix in the spices, along with some salt and a sprinkle of black pepper. Stir it all together.
03 - Blend the flour and cornmeal into the mixture. Mix until everything's just combined.
04 - Heat oil in a frying pan. Scoop out 1/4 cup and form small patties about 3 inches wide. Cook on each side for 2-3 minutes. Fry them in batches.

# Notes:

01 - Best results come with fresh corn. Frozen can be used too.
02 - Keep the pan uncrowded when frying.
03 - Serve hot for the best taste.
04 - Yields 10 to 12 pieces.
