Crispy Cod Fish Sandwich (Print Version)

# Ingredients:

→ Fish

01 - Cod like Icelandic type or similar (1½ pounds)
02 - Season with pepper and salt

→ Dry Coating

03 - 1 cup of plain flour
04 - ½ tablespoon of Old Bay mix

→ Wet Batter

05 - Another 1 cup of plain flour
06 - 1 full tablespoon of Old Bay spice
07 - A half tablespoon of smoked paprika
08 - 1 small teaspoon of turmeric powder
09 - ½ teaspoon of ground white pepper
10 - ½ teaspoon baking powder
11 - 1 egg, cracked
12 - 1 cup of sparkling water
13 - Pepper and salt to taste

→ Sauce for Sandwich

14 - ½ cup mayo
15 - 3 tablespoons finely chopped dill pickles
16 - 1 tablespoon of capers, minced
17 - 1 tablespoon of freshly chopped parsley
18 - 1 tablespoon fresh lemon juice
19 - 2 teaspoons Dijon mustard
20 - Pepper and salt for seasoning

→ For Cooking and Serving

21 - 2 quarts peanut or neutral oil for frying
22 - 4 sandwich rolls or burger buns
23 - 2 cheddar cheese slices, cut in half

# Instructions:

01 - Using a deep, heavy pan, bring the frying oil to 375°F. Keep it hot during cooking.
02 - Stir mayo, pickles, parsley, capers, mustard, and lemon juice together in a bowl. Add salt and pepper for flavor.
03 - Slice cod into squares to fit the buns (around 4-6 ounces each). Sprinkle with salt and pepper, then set on a wire rack placed above a pan.
04 - Mix flour with Old Bay seasoning in one shallow bowl for the dry coating. In another bowl, combine the rest of the flour, spices, baking powder, egg, and sparkling water to make the wet batter. It should look like a thin salad dressing.
05 - Dip each fish piece into the dry mix first, then cover it in the wet batter. Let any extra batter drip back into the bowl.
06 - Fry the fish for about 2-3 minutes per side until both sides are golden. Rest on a wire rack to drain any oil.
07 - Hold the buns over steaming water for a quick 10 seconds to soften them.
08 - Spread some sauce on the bottom bun, stack the fried fish, a cheese half, extra sauce, and then the top bun.

02 - Replace cod with haddock, halibut, or Alaskan pollock if preferred.
