Chicken Fritters Leftovers (Print Version)

# Ingredients:

01 - 9 oz (around 1 ½ cups) of shredded chicken breast from leftovers.
02 - 2 tablespoons of softened cream cheese.
03 - 1 egg.
04 - ¼ cup mozzarella cheese, grated.
05 - Half a teaspoon of salt (optional).
06 - 2 tablespoons of plain flour.

# Instructions:

01 - Use a knife or scissors to cut the chicken into tiny pieces until you’ve got about 1.5 cups.
02 - Throw the chicken, cream cheese, egg, mozzarella, flour, and salt into a mixing bowl and stir until smooth.
03 - Melt one tablespoon of butter or heat a splash of oil in a skillet over medium-low heat.
04 - Scoop some of the mixture (about a tablespoon at a time), drop it onto the pan, and flatten it into a patty with the back of a spoon.
05 - Let them cook for 2-3 minutes per side, or until they’re golden brown, then move them to a plate lined with a paper towel.

# Notes:

01 - Chopping chicken with kitchen scissors makes the job super quick and easy.
02 - Since the chicken is already cooked, keep an eye on the patties—they’ll brown fast.
03 - Feel free to throw in some spices or seasonings you like to add extra flavor.
