Use a knife or scissors to cut the chicken into tiny pieces until you’ve got about 1.5 cups.

Throw the chicken, cream cheese, egg, mozzarella, flour, and salt into a mixing bowl and stir until smooth.

Melt one tablespoon of butter or heat a splash of oil in a skillet over medium-low heat.

Scoop some of the mixture (about a tablespoon at a time), drop it onto the pan, and flatten it into a patty with the back of a spoon.

Let them cook for 2-3 minutes per side, or until they’re golden brown, then move them to a plate lined with a paper towel.
