Crispy Cauliflower Tots (Print Version)

# Ingredients:

→ Base

01 - 1 cup plain cottage cheese
02 - 1 head of cauliflower
03 - ½ cup bread crumbs

→ Cheese & Aromatics

04 - ¼ cup chopped scallions
05 - ½ cup parmesan cheese, grated

→ Seasonings

06 - ½ teaspoon onion powder
07 - ¼ teaspoon black pepper
08 - ½ teaspoon salt
09 - ½ teaspoon garlic powder

→ Binding

10 - 1 egg

# Instructions:

01 - Set your oven to 400°F (200°C) and let it heat up.
02 - Boil or steam the cauliflower until soft, about 5-7 minutes. Drain and let it cool a bit.
03 - Mash the cooled cauliflower, stir in the egg, cottage cheese, and seasoning until blended smoothly.
04 - Slowly add breadcrumbs to the mix until it sticks together. Shape it into small, even tots.
05 - Spread the tots on a baking tray lined with parchment. Bake for 20-25 minutes until they turn golden and crispy.
06 - Let them cool down just a little before digging in.

01 - Swap out regular tater tots with this lighter version.

04 - The mix shouldn't be too dry or too runny.
