Golden Burrata Chicken (Print Version)

# Ingredients:

01 - 4 thin chicken breasts
02 - 1/2 cup plain flour
03 - 3 beaten eggs
04 - 1 1/2 cups panko breadcrumbs, seasoned
05 - Pinch of salt and pepper
06 - Cooking oil for frying

→ Tomato Basil Mix

07 - 2 cups small cherry tomatoes
08 - 1 1/2 cups basil leaves, sliced thinly
09 - 3 crushed garlic cloves
10 - 1 teaspoon of fresh lemon zest
11 - 1 teaspoon lemon juice
12 - 1/2 teaspoon coarse salt
13 - 1/4 cup dry wine (white)
14 - 2 tablespoons olive oil

→ Toppings

15 - 1 torn burrata ball
16 - 2 tablespoons drizzled balsamic glaze

# Instructions:

01 - Wrap chicken breasts in plastic and pound until they're flat and even. Sprinkle with a bit of salt and pepper.
02 - Start with flour, then dip in egg, and finish with panko on each chicken breast.
03 - Warm oil to 325°F in a sturdy skillet. Fry chicken for 2-3 minutes per side till crispy golden. Rest on paper towels to drain.
04 - Blister tomatoes in hot olive oil. Stir in garlic and salt. Splash in wine to deglaze. Mix in zest, basil, and squeeze of lemon.
05 - Pile tomato mixture over chicken cutlets. Add burrata pieces and balsamic drizzle on top.
