Crispy goat honey bricks (Print Version)

# Ingredients:

01 - 3 round sheets of phyllo dough.
02 - 2 tablespoons of honey.
03 - 100 grams of goat cheese.
04 - 2 egg yolks.
05 - Rosemary.
06 - Salt.
07 - Pepper.

# Instructions:

01 - Set your oven to 180°C (or 350°F) to warm up.
02 - In a bowl, stir the goat cheese with honey and rosemary. Add salt and pepper to taste.
03 - Cut each phyllo sheet into 4 strips. Place a spoonful of the cheese-honey mix at the bottom of each strip. Fold it into triangles, working up to the end. Tuck in the last edge.
04 - Lay the triangles on a sheet pan lined with parchment paper. Brush them with the egg yolks.
05 - Bake them for about 10 minutes, or until the pastries turn crispy and golden.
