Set your oven to 180°C (or 350°F) to warm up.

In a bowl, stir the goat cheese with honey and rosemary. Add salt and pepper to taste.

Cut each phyllo sheet into 4 strips. Place a spoonful of the cheese-honey mix at the bottom of each strip. Fold it into triangles, working up to the end. Tuck in the last edge.

Lay the triangles on a sheet pan lined with parchment paper. Brush them with the egg yolks.

Bake them for about 10 minutes, or until the pastries turn crispy and golden.
