Tropical lassi drink (Print Version)

# Ingredients:

01 - 5 thick pineapple rings, about 1.25 cm each
02 - 1 tablespoon coconut oil
03 - 1 tablespoon unsalted butter
04 - 1 tablespoon light brown sugar
05 - 1/4 teaspoon salt
06 - 1 can (400 ml) light coconut milk
07 - 225 grams Greek yogurt
08 - 1/4 teaspoon ground cardamom
09 - A small pinch of ground cinnamon

# Instructions:

01 - Pop a large skillet on medium-high heat, then toss in the coconut oil and butter. When melted, lay 4 pineapple slices in the skillet, sprinkle with salt, and brown sugar. Let them cook till golden and caramelized on both sides — roughly 5 minutes each. Take them off the heat and allow a bit of cooling.
02 - Take the caramelized pineapple, coconut milk, yogurt, cardamom, and cinnamon, then blend it all till smooth.
03 - Pour your blend into glasses, dust the top with just a little cardamom. Slice the last pineapple ring in half, use as garnish, and enjoy right away.
