Creamy Tomato Tortellini (Print Version)

# Ingredients:

01 - 1/2 tablespoon of olive or avocado oil.
02 - 1 chopped shallot.
03 - 2 minced garlic cloves.
04 - 1/2 cup roasted red bell peppers.
05 - 2 cups cherry tomatoes.
06 - 1 teaspoon of dried basil.
07 - 1/8 teaspoon black pepper.
08 - 1/2 teaspoon salt.
09 - 1 cup of heavy cream.
10 - 1 tablespoon of tomato paste.
11 - 1-2 cups of chopped spinach.
12 - 3/4 cup grated Parmesan cheese.
13 - 3 cups of cooked cheese tortellini.
14 - 1 teaspoon of Italian seasoning.

# Instructions:

01 - Throw in the tomatoes and let them cook until soft, about 10 minutes. Give them a slight mash.
02 - Heat up the oil, then sauté the chopped shallot and garlic for around 3 minutes over medium heat.
03 - Stir in the roasted peppers, spices, and tomato paste. Pour in the cream and let everything simmer for 2-3 minutes.
04 - Mix in the Parmesan, cooked tortellini, and spinach. Stir until combined, then sprinkle more grated cheese on top.
05 - Season to your liking and serve. If you'd like, add parsley or fresh basil on top as garnish.

01 - Quick to prepare, great for a full meal.
02 - Can be prepped ahead of time, just leave out the pasta until serving.
