Creamy Sausage Soup (Print Version)

# Ingredients:

01 - 3 garlic cloves, finely chopped
02 - 1 medium onion, chopped small
03 - 1 pound spicy Italian sausage
04 - 1.5 pounds Yukon Gold potatoes, cut into cubes
05 - 5-6 cups chicken broth
06 - 1 cup heavy cream
07 - 2-3 cups fresh kale, roughly chopped
08 - 6 crispy bacon slices, crumbled
09 - Add salt and pepper as needed

# Instructions:

01 - Fry the sausage while breaking it into chunks. Drain the excess fat but leave about a tablespoon in the pan.
02 - Cook onions in the saved grease for around 5 minutes, then toss in the garlic and let it cook for another minute.
03 - Throw in the potatoes, sausage, and broth. Let it cook gently for 10 minutes or so until the potatoes soften.
04 - Mix in the kale and cream. Let it heat for about 5 minutes. Add salt and pepper to your taste.
05 - Serve in bowls with crumbled bacon sprinkled on top. Keep it hot.

# Notes:

01 - You can prepare this in an Instant Pot or slow cooker.
02 - Removing grease from sausage makes it lighter.
03 - Use a spicy sausage for bold flavor.
