Creamy Shrimp Scampi Bake (Print Version)

# Ingredients:

→ Noodles

01 - 1 tbsp salt (to season the water for boiling)
02 - 12 oz penne or linguine

→ Scampi Sauce

03 - 1 lb peeled and deveined large shrimp
04 - 3 tbsp olive oil
05 - 3 tbsp butter (unsalted)
06 - 4 minced garlic cloves
07 - ½ cup chicken broth or white wine
08 - ½ tsp crushed red pepper flakes (optional)
09 - Juice of a lemon
10 - Salt and black pepper (for seasoning)
11 - ½ cup parsley (chopped fresh)

→ Toppings

12 - ¼ cup breadcrumbs (use if you want crunch)
13 - ½ cup Parmesan cheese (grated)
14 - 1 cup mozzarella (shredded)

# Instructions:

01 - Cook the pasta in salty water just until firm to the bite. Drain it and leave it aside.
02 - Heat a pan over medium heat and melt the butter with olive oil. Toss in the garlic and pepper flakes, cooking for about 28 seconds. Add shrimp and sear each side for 2–3 minutes, then pour in the lemon juice and broth (or wine). Let it bubble gently for 2 minutes. Sprinkle in some parsley, salt, and pepper, then take it off the heat.
03 - Turn your oven to 375°F (190°C). Mix the cooked pasta with the sauce and pour it into a greased 9×13-inch dish. Sprinkle with breadcrumbs, mozzarella, and Parmesan. Pop it in the oven for about 16–21 minutes until the cheese is bubbly and golden.
04 - Top it with some chopped parsley and lemon slices. Serve warm and dig in!

01 - Fresh shrimp is best to use here for the tastiest flavor and best consistency.
