Kielbasa Potato Soup (Print Version)

# Ingredients:

01 - 1 medium carrot, finely chopped.
02 - 4 garlic cloves, minced.
03 - Salt and black pepper to taste.
04 - 300ml whole milk.
05 - 1.25 liters of chicken broth.
06 - 30g fresh parsley, roughly chopped.
07 - 1 medium onion, chopped into small pieces.
08 - 750g potatoes, peeled and cut into cubes.
09 - 300g kielbasa, sliced into small chunks.
10 - 2 celery sticks, diced.
11 - 100g cheddar, shredded.
12 - A tablespoon of olive oil.
13 - Half a teaspoon of crushed red chili flakes.

# Instructions:

01 - Warm up the oil in a big pot. Cook the sausage pieces till brown and crispy. Take them out and set them aside.
02 - In the same pot, toss in the onion, celery, and carrot. Sauté them in the tasty sausage juices. Add garlic and chili for a little kick.
03 - Pour in the chicken stock and throw in the potatoes. Bring it to a boil, then let it gently bubble for 10-12 minutes. The potatoes should be nice and soft.
04 - Carefully warm up the milk with some soup to avoid curdling, then pour it all back into the pot. Stir in the kielbasa chunks, grated cheese, and parsley. Adjust the seasoning before serving.
