Creamy Gravy Chicken (Print Version)

# Ingredients:

01 - 1 medium onion, diced.
02 - 1 tablespoon olive oil.
03 - 1 tablespoon butter.
04 - 1½ lbs chicken breasts, sliced into strips.
05 - ½ teaspoon kosher salt.
06 - ¼ teaspoon black pepper.
07 - ½ teaspoon poultry seasoning.
08 - 3 tablespoons flour.
09 - 3 tablespoons butter.
10 - 1¼ cups chicken stock.
11 - ½ teaspoon black pepper.
12 - ¾ teaspoon minced fresh thyme (or ¼ teaspoon dried thyme).
13 - ¼ teaspoon kosher salt.
14 - 1-2 tablespoons plain Greek yogurt.
15 - Hot mashed potatoes for serving.

# Instructions:

01 - Warm oil and butter in a big skillet. Toss in the onion and cook it for about 5 minutes. Sprinkle chicken with spices and brown each side for 4-5 minutes. Take out the chicken and onion, and set aside to stay warm.
02 - On medium-low heat, melt the butter. Stir in the flour and cook it for a minute. Gradually pour in the stock while whisking to keep it smooth. Mix in thyme and seasoning, then let it simmer for 2-3 minutes to thicken.
03 - Add the chicken back to the pan. Cover it and let it cook for 3-4 minutes. Turn off the heat, stir in the yogurt, and serve everything over mashed spuds.
