Creamy Ditalini Sausage (Print Version)

# Ingredients:

01 - 8 ounces small ditalini noodles.
02 - 1 to 2 tablespoons of avocado oil.
03 - 8 ounces ground mild Italian sausage.
04 - 1/2 cup finely diced sweet onion.
05 - 2 minced garlic cloves.
06 - About 1 to 1.5 tablespoons of tomato paste.
07 - A sprinkle of kosher salt to your taste.
08 - A few cracks of black pepper.
09 - 1/2 to 3/4 cup of low-sodium broth (chicken).
10 - 3/4 to 1 cup of heavy cream.
11 - 1/2 cup of grated Parmesan cheese.
12 - A pinch of red pepper flakes for topping.

# Instructions:

01 - In salted water, cook the pasta until it's firm but cooked. Drain and coat with a little oil, then leave it aside.
02 - Over medium-high heat, brown the sausage in oil. Add in the garlic and onion, and cook until the onion softens.
03 - Stir in tomato paste and let it cook down for a few minutes. Season with some salt and pepper. Pour in the broth and let it cook until liquid reduces.
04 - Lower the heat and mix in the heavy cream and Parmesan. Stir well until the cheese melts into the sauce.
05 - Toss that cooked pasta into the sauce until evenly coated. Top with red pepper flakes before serving.

# Notes:

01 - Use broth to thin out the sauce if needed.
02 - Cooking pasta just firm makes the texture better.
03 - Cook tomato paste longer for a richer flavor.
