Creamy Chicken Pasta (Print Version)

# Ingredients:

01 - 12 ounces whole grain pasta.
02 - 1 pound chicken breast.
03 - 2 tablespoons olive oil.
04 - 3 cloves garlic, minced.
05 - 1 cup ricotta cheese.
06 - 1/2 cup shredded parmesan.
07 - 1/2 cup chicken broth.
08 - 1/2 cup heavy cream (optional).
09 - 1 teaspoon Italian seasoning.
10 - 1/4 teaspoon red chili flakes (if you'd like).
11 - Salt and black pepper to taste.
12 - 2 cups fresh spinach (optional).
13 - Fresh basil or parsley for garnish.

# Instructions:

01 - Boil the pasta in salted water until it's just tender. Keep 1/2 cup of the pasta water aside.
02 - Season the chicken, cook it in oil for 6-8 minutes until browned. Remove and set aside.
03 - Sauté the garlic, then mix in ricotta, parmesan, broth, and cream. Stir in the seasoning and spices.
04 - Put the chicken back, toss in the cooked pasta, and stir. Add the reserved pasta water if needed to adjust the thickness.
05 - If using spinach, stir it in and let it wilt for a couple minutes. Sprinkle fresh herbs on top before serving.

01 - You can adjust the sauce's consistency using saved pasta water.
02 - Adding vegetables is optional, but they're a great source of nutrients.
