Cheeseburger Soup (Print Version)

# Ingredients:

01 - 1 pound of ground beef.
02 - 3/4 cup diced celery.
03 - 3/4 cup shredded carrots.
04 - 3/4 cup chopped onions.
05 - 1 teaspoon dried parsley flakes.
06 - 1 teaspoon dried basil.
07 - 4 tablespoons of butter, split.
08 - 4 cups of peeled and diced potatoes.
09 - 3 cups chicken stock.
10 - 1/4 cup all-purpose flour.
11 - 2 cups of cubed Velveeta cheese.
12 - 3/4 teaspoon of salt.
13 - 1/4 to 1/2 teaspoon black pepper.
14 - 1 1/2 cups of milk.
15 - 1/4 cup of sour cream.

# Instructions:

01 - Cook the ground beef in a pan, drain, then place to the side. Toss the vegetables in 1 tablespoon of butter until soft. Mix in the dried herbs while cooking.
02 - Mix broth, beef, and potatoes in a pot. Heat to boiling, then turn it down and cook for 10-12 minutes until the potatoes are soft.
03 - Melt 3 tablespoons of butter in a pan, then blend in the flour and cook for a few minutes. Stir this into the soup, bring it to a boil again, and cook for a couple of minutes.
04 - Lower the heat. Stir in cheese, milk, salt, and pepper until smooth. Take off the heat and mix in the sour cream before serving.
