Potato Soup with Apples (Print Version)

# Ingredients:

01 - 1 tablespoon maple syrup, plus extra for topping.
02 - 3 tablespoons butter.
03 - ¾ teaspoon ground nutmeg.
04 - 2½ pounds peeled and chunked sweet potatoes or yams.
05 - 2 large apples, about 1¼ pounds total.
06 - ¾ teaspoon ground cinnamon.
07 - 6 cups vegetable stock.
08 - 2-3 tablespoons squeezed lemon juice.
09 - 1 teaspoon salt.
10 - 2 cups diced shallots or onions.

# Instructions:

01 - In a big pot on medium heat, melt the butter. Add the onions and sauté for 3-4 minutes until they’re soft.
02 - Toss in apple pieces and sweet potatoes. Stir for around 3 minutes as they cook.
03 - Pour in 2 cups of broth first to loosen anything stuck to the pot. Add the rest of the stock, along with spices and salt. Let it bubble away for 7-10 minutes, or until the potatoes are fork-tender.
04 - Turn off the stove. Use an immersion blender to carefully mix everything until the soup is velvety.
05 - Fine-tune the taste with lemon, salt, and syrup. Serve it warm, adding a maple drizzle on top if you'd like.

# Notes:

01 - Makes around 9-10 cups of soup.
02 - Use olive oil if making it vegan-friendly.
03 - Good for 3 days when refrigerated, or 3 months if frozen.
