Protein Cookie Dough Treats (Print Version)

# Ingredients:

01 - 1 cup of 2% fat cottage cheese
02 - 2 tablespoons of sugar-free maple-flavored syrup (e.g., Lakanto)
03 - 1 teaspoon of vanilla extract (pure)
04 - 1 1/2 cups of almond flour or all-purpose flour (heat it for safety first)

→ Protein & Chocolate Layer

05 - 1/4 cup of vanilla protein powder, or any flavor you like
06 - 1 1/2 cups of sugar-free dark chocolate chips, set some aside (e.g., Lily's)
07 - 1 teaspoon of coconut oil

# Instructions:

01 - Toss the cottage cheese into a blender or food processor. Blend it till it's silky smooth.
02 - Reserve a cup of chocolate chips for later. In a bowl, stir the blended cottage cheese with everything else until it's mixed well.
03 - Stick the dough in the fridge for about 30 minutes. It should stiffen up a bit.
04 - Line a baking tray with parchment paper. Using a cookie scoop, make dough balls, rolling each evenly. Freeze them on the tray for at least 20 minutes.
05 - Melt the chocolate chips you set aside earlier in the microwave, heating in 15-second bursts and stirring in between. Dunk the chilled balls in chocolate and let them firm up in the fridge on the parchment paper.
