Break the sponge fingers into small bits and toss them into your blender or food processor. Add the mascarpone and coffee. Blend everything together until you get a smooth and uniform dough.

Taste it and tweak the coffee level to match your preference for flavor and consistency. You could add sugar if you like, but honestly, I think it works great without it.

Roll the dough into small balls, then coat each ball in unsweetened cocoa powder.
