01 - 200g nuts (pistachios, almonds, pine nuts).
02 - 1/4 teaspoon cloves (ground).
03 - 25g ginger, crystalized.
04 - 1/4 teaspoon ground cinnamon.
05 - 1 tablespoon optional brandy.
06 - 600g mixed dried fruits (dates, raisins, figs).
07 - Juice and zest from one big orange.
08 - 1/4 teaspoon cardamom (ground).
09 - 1/4 teaspoon powdered ginger.
10 - 1/4 teaspoon caraway seeds.

# Instructions:

01 - Mix the orange zest, juice, and dried fruits in a bowl. Add the alcohol, if you're using it, and let it sit while you work on the nuts.
02 - Sprinkle spices over the nuts, then toast for 5 minutes. Cool them down before using.
03 - Put everything into a food processor and mix until it's thick and easy to mold.
04 - Roll small handfuls into round balls, then coat them in sugar. Pop them in the fridge overnight.
05 - Coat the balls in more sugar. Seal them up tightly in a container for a few days to develop the flavor before enjoying.

# Notes:

01 - Substitute other dried fruit options.
02 - Tastes better after resting.
