Simple French Onion Soup (Print Version)

# Ingredients:

01 - 1/2 cup white wine (or swap with broth).
02 - 5 large yellow onions, sliced thinly.
03 - 1 spoon of fresh thyme.
04 - 1 bay leaf.
05 - 3 garlic cloves, finely chopped.
06 - Black pepper for a pinch.
07 - 2 spoons of flour.
08 - 8 cups beef stock.
09 - 1 spoon of table salt.
10 - 2 spoons of butter.
11 - 1 small loaf of French bread.
12 - 1 spoon of olive oil.
13 - 8 oz Gruyere cheese, grated thick.
14 - 1 spoon of Worcestershire sauce.
15 - 1 spoon butter to toast the bread.
16 - Some garlic powder for sprinkling.

# Instructions:

01 - In a large pot, melt the butter with the oil. Toss in the onions plus salt. Stir occasionally over 30-40 minutes on medium heat until they're deeply golden. Turn heat lower if they're browning too quickly.
02 - Add chopped garlic and sprinkle the flour on top. Let it cook for another 2 minutes while stirring.
03 - Pour the wine in and scrape up the stuck brown bits from the bottom. Add the thyme, broth, pepper, Worcestershire, and bay leaf. Leave uncovered to cook for 30 minutes.
04 - Pull out the bay leaf. Taste and add more salt or pepper if needed.
05 - Set oven to 400°F. Put bread slices on a tray lined with parchment. Brush with melted butter, sprinkle garlic powder, and toast for 5 minutes on both sides.
06 - Pick your serve style: - Broil soup in oven-proof bowls, layering toast and cheese on top. 2 minutes to melt. - Or bake toast with cheese for 3-5 minutes, then float it in bowls of soup.

# Notes:

01 - Mix together beef and chicken broth if you're out of one.
02 - Check the complete guide for freezing options.
