Chickpea Mediterranean Bowl (Print Version)

# Ingredients:

01 - 1 teaspoon Dijon mustard.
02 - 1 teaspoon sea salt.
03 - Freshly ground black pepper.
04 - 2 tablespoons fresh lemon juice.
05 - 2 tablespoons extra-virgin olive oil.
06 - 1 garlic clove, grated.
07 - 1/4 cup chopped fresh dill.
08 - 1/2 English cucumber, diced.
09 - 1/2 cup chopped fresh mint, plus extra for garnish.
10 - 1/2 cup pitted kalamata olives, halved.
11 - 1/2 cup pickled red onions.
12 - 2 cups halved red and yellow grape tomatoes.
13 - 3 cups cooked and rinsed chickpeas, drained.
14 - 1/4 cup chopped fresh parsley.

# Instructions:

01 - In a big bowl, stir together olive oil, mustard, garlic, lemon juice, salt, and pepper.
02 - Toss in the chickpeas, tomatoes, cucumber, olives, and pickled onions. Mix them well with the dressing.
03 - Mix in parsley, dill, and mint. Taste, adjust the seasoning, and sprinkle with extra mint at the end.
