Chicken Gnocchi Soup (Print Version)

# Ingredients:

01 - 1 cup spinach, finely chopped.
02 - 1 quart half-and-half cream.
03 - 4 tablespoons of butter.
04 - 2 minced cloves of garlic.
05 - 1/4 teaspoon ground nutmeg (if desired).
06 - 28 ounces of chicken stock.
07 - 1 cup diced onions.
08 - 16 ounces of gnocchi pasta.
09 - 1 tablespoon of olive oil.
10 - 1/2 cup finely chopped celery.
11 - 1/4 cup plain flour.
12 - 1 cup cooked chicken breast, diced.
13 - 1 cup grated carrots.
14 - 1/2 teaspoon dried parsley flakes.
15 - 1/2 teaspoon dried thyme.

# Instructions:

01 - Heat oil with butter in your pot. Toss in onion, celery, and garlic. Cook it all until the onions look soft.
02 - Mix in the flour while cooking for a minute. Pour in the cream and bring to a low boil. Add the broth and let it cook again.
03 - Add in your seasonings, followed by the vegetables. Stir in the chicken and gnocchi to warm it all through. Adjust seasoning to your taste.

01 - Store-bought rotisserie chicken works well.
02 - You can adjust how much thyme you use.
03 - Slice up larger gnocchi if needed.
