Chicken Bites Potato (Print Version)

# Ingredients:

01 - 1 cup of shredded mozzarella cheese.
02 - 2-3 Serrano peppers (finely chopped).
03 - 1 tablespoon of chopped parsley.
04 - 3 tablespoons cornstarch.
05 - 1 lb of cooked, shredded chicken breast.
06 - 4 cooked potatoes, grated.
07 - 1/2 cup of diced cooked carrots.
08 - 1/2 cup of chopped bell pepper.
09 - 1 egg.
10 - Salt, pepper, powdered garlic, onion powder, chicken seasoning.
11 - Oil for frying.
12 - 1 cup of breadcrumbs.
13 - 1/2 cup of flour + 1/3 cup of water.

# Instructions:

01 - Combine everything in a big bowl, stirring until it turns into a sticky dough.
02 - Whisk the flour with water until it thickens, then coat your croquettes in it.
03 - Shape the dough into croquettes, then first coat them in flour and follow with breadcrumbs.
04 - Heat oil, then fry the croquettes for 2-3 minutes each side until golden brown.
05 - Spray the croquettes with a bit of oil and air-fry at 200°C for 10 minutes, flipping halfway.

# Notes:

01 - You can make these croquettes ahead of time and keep them frozen.
02 - Using an air fryer makes them a lighter choice.
