Cheesy Chicken Bread (Print Version)

# Ingredients:

01 - 400g mini chicken fillets
02 - 2-3 baguettes of garlic bread
03 - 1 small red onion, cut into slices
04 - 250g mozzarella and cheddar blend
05 - 1 red pepper, sliced thin
06 - 190g of red pesto

# Instructions:

01 - Turn your oven to 200°C/400°F. Sear the chicken in some oil for 3-4 mins per side until golden.
02 - Soften the onion and pepper by frying them for about 12 mins. Mix in the chicken and stir through pesto at the end.
03 - Cut the baguettes open lengthwise, stick them in the oven for 7 mins.
04 - Layer the chicken mix into the bread, then cover with the cheese.
05 - Bake for 5-6 mins till the cheese is bubbly and golden.

# Notes:

01 - Keeps in the fridge for up to 3 days.
02 - Wrap in foil to freeze.
03 - Warm in oven at 180°C for around 12-14 mins.
