Turn your oven to 200°C/400°F. Sear the chicken in some oil for 3-4 mins per side until golden.

Soften the onion and pepper by frying them for about 12 mins. Mix in the chicken and stir through pesto at the end.

Cut the baguettes open lengthwise, stick them in the oven for 7 mins.

Layer the chicken mix into the bread, then cover with the cheese.
