Comforting Family Soup (Print Version)

# Ingredients:

→ Vegetables and Aromatics

01 - One onion, thinly sliced
02 - Four plump carrots, diced into small cubes
03 - Two celery stalks, chopped finely
04 - Two aromatic bay leaves
05 - 10 ml fresh thyme sprigs
06 - 250 ml frozen green peas

→ Proteins and Starches

07 - Two cooked chicken breasts, hand-pulled into shreds
08 - A cup of lentils
09 - 250 ml of orzo pasta

→ Liquids and Seasonings

10 - Two liters of chicken stock, homemade or store-bought
11 - A drizzle of cooking oil for sautéing
12 - Salt and freshly ground pepper to taste

# Instructions:

01 - Grab a big pot and heat up a little oil over medium-high heat. Toss in the sliced onion and stir gently until it softens and looks somewhat clear, about a minute.
02 - Stir in the diced carrots and celery, then pour in the chicken broth. Mix in the lentils, bay leaves, and thyme. Sprinkle with salt and pepper as desired. Bring it to a boil, then lower the heat and let it simmer for 10 minutes.
03 - Drop in the orzo pasta and shredded chicken. Let it cook for another 10 minutes, stirring every so often so the pasta doesn't stick to the bottom.
04 - Take the pot off the heat and mix in the frozen peas. Let it sit for a few minutes before serving it nice and hot.
