# Ingredients:

01 - 1 tablespoon olive oil.
02 - 2 tablespoons butter.
03 - 1 medium onion, diced small.
04 - 1 stalk celery, chopped into small pieces.
05 - 2 garlic cloves, minced.
06 - 1/4 cup all-purpose flour.
07 - 4 cups chicken broth.
08 - 2 cups heavy cream (500 ml).
09 - 1 teaspoon Italian seasoning mix.
10 - A pinch of salt and black pepper, to your liking.
11 - 2 cups shredded, cooked chicken.
12 - 1 pound potato gnocchi (450 g).
13 - 1 cup fresh spinach, roughly chopped.
14 - 1/4 cup grated Parmesan cheese.

# Let's Cook:

01 - Start by heating the butter and olive oil in a big pot over medium heat. Toss in the onion, celery, and garlic, and cook them until they're soft and smell great.
02 - Sprinkle the flour over the cooked veggies and stir it all together until it thickens. Let it cook for 1 minute.
03 - Slowly pour in the broth and cream, whisking as you go to keep it smooth and lump-free.
04 - Mix in the Italian seasoning along with some salt and pepper. Stir occasionally while letting the mixture simmer for about 5-7 minutes.
05 - Stir in the cooked chicken and gnocchi, then let it simmer for another 5-7 minutes. Finally, toss in the spinach and let it cook for 1-2 minutes before serving.
