Chicken Burrito Bowl Meal (Print Version)

# Ingredients:

01 - 1 cup colby jack cheese, shredded.
02 - 1 lime, juiced.
03 - 1 teaspoon cumin powder.
04 - 1 teaspoon smoked paprika spice.
05 - 2 teaspoons chili powder mix.
06 - 1 teaspoon onion powder seasoning.
07 - 1 teaspoon garlic powder seasoning.
08 - 2½ cups chicken stock, low salt.
09 - 1 (15 oz) can rinsed and drained black beans.
10 - 1 (14.5 oz) can diced tomatoes, liquid removed.
11 - 1 cup raw, extra-long white rice.
12 - ¼ cup chopped yellow onion.
13 - 3 tablespoons olive or vegetable oil.
14 - 1 pound chicken breast, cut into small chunks.
15 - Tomatoes, green onions, guacamole, and sour cream for the topping.
16 - Salt and black pepper to taste.

# Instructions:

01 - Heat 2 tablespoons of oil and cook onions until they soften up.
02 - Sprinkle salt and pepper on the chicken. Add it to the pan and cook over medium-high heat until browned.
03 - Push chicken to the side. Pour in 1 more tablespoon of oil, then cook the rice for 2 minutes until it lightly browns.
04 - Add tomatoes, beans, chicken stock, and all the spices. Cover and let it simmer on low heat for around 20 minutes or until the rice softens.
05 - Squeeze in lime juice and sprinkle cheese on top. Cover for 2-3 minutes. Add your choice of garnish before serving.

# Notes:

01 - You can swap the chicken for ground turkey or beef.
02 - Include corn or bell peppers if you want.
03 - Leave out the cheese to make it a bit lighter.
