Avocado Chicken Bowl (Print Version)

# Ingredients:

01 - Avocados (2, ripe and diced after removing the pit)
02 - Chicken breasts (2 medium, already cooked and cut into small pieces or shredded)
03 - Corn (½ cup, roasted, canned, or frozen)

→ Fresh Additions

04 - Cilantro leaves (2 tablespoons, finely chopped)
05 - Onions (¼ cup, use red or green, finely chopped)

→ Flavor Boosters

06 - Lime or lemon juice (2 tablespoons, freshly squeezed)
07 - Olive oil (2 tablespoons)
08 - Salt and pepper (add as much as you like)

# Instructions:

01 - Use a big bowl to blend the cooked chicken, avocado chunks, onions, corn, and chopped cilantro.
02 - Pour olive oil and fresh lime or lemon juice over it, and sprinkle with salt and pepper.
03 - Gently mix everything, being careful to keep the avocado pieces intact.

# Notes:

01 - Rotisserie chicken works great here if you want to save time.
02 - Parsley or dill can work as a swap for cilantro.
03 - Other options to toss in: diced tomatoes, bacon pieces, black beans, or chopped cucumbers.
04 - Avocado makes it creamy enough, so no need for mayonnaise.
