Cherry Goat Cheese Toast (Print Version)

# Ingredients:

→ Base

01 - 12 baguette slices, each about half an inch thick
02 - 2 teaspoons of extra virgin olive oil

→ Toppings

03 - A tablespoon of balsamic glaze (store-bought or homemade)
04 - A tablespoon and a teaspoon of syrupy honey
05 - 24 cherries, fresh or frozen, pitted and halved
06 - 1 sprig of rosemary, stripped of leaves
07 - A quarter cup of creamy goat cheese
08 - Quarter cup of mild cream cheese
09 - Half a teaspoon of flaky sea salt

# Instructions:

01 - Brush olive oil lightly over the baguette slices. Place them in the oven at 375°F for around 7-8 minutes. Flip the slices halfway through so they’re golden and crispy but soft inside.
02 - Arrange the halved cherries, cut side up, on a baking tray lined with parchment. Sprinkle chopped rosemary over the top and drizzle with olive oil. Bake for 5-7 minutes along with the bread. Discard the rosemary sprig when done.
03 - In a food processor or blender, blend the goat cheese, cream cheese, a teaspoon of honey, a quick squeeze of about half a teaspoon of lemon juice, and half a teaspoon of zest. Process until you get a silky smooth mix.
04 - Layer each toasted slice with the cheese spread, topping it with 2-3 cherry halves. To finish, drizzle more honey and add a touch of balsamic glaze. Sprinkle a little sea salt and fresh rosemary leaves on top.

# Notes:

01 - The cherries will last up to 3 days if you store them in the refrigerator.
02 - Make the cheese mixture in advance! It’ll keep for up to 5 days in an airtight container in the fridge.
