Cherry Filled Cookies (Print Version)

# Ingredients:

01 - 1 1/2 cups plain flour.
02 - 1/2 cup cocoa powder (Dutch processed).
03 - 1/2 tsp baking powder.
04 - 1/2 tsp fine sea salt.
05 - 3/4 cup softened unsalted butter.
06 - 3/4 cup packed brown sugar.
07 - 1/4 cup granulated sugar.
08 - 2 large egg yolks at room temp.
09 - 1 1/2 tsp vanilla extract.
10 - 5 oz cherry-flavored dark chocolate, chopped up.
11 - 6 tbsp heavy whipping cream.
12 - 1/4 cup cherry jam.

# Instructions:

01 - Mix flour, cocoa, and salt. Beat butter with sugars until light. Blend in yolks, vanilla, and finally dry mix.
02 - Scoop out dough into 32 pieces. Roll into smooth balls, press gently in center, refrigerate for an hour.
03 - Preheat to 350°F. Place 8 cookies per tray, bake 9–11 mins. Press centers again while hot. Let cool fully.
04 - Pour warm cream over chocolate. Stir till silky, then fold in cherry jam completely.
05 - Spoon ganache into each cookie's hollow. Let chill for about 10–15 mins.

01 - Dutch cocoa gives the richest flavor.
02 - Unfilled cookies can be frozen easily.
03 - Adjust shapes while cookies are warm.
04 - Store in sealed container for up to 3 days.
