Tasty Middle Eastern Flatbread (Print Version)

# Ingredients:

→ Manakish Dough

01 - Flour - 300g
02 - Warm water - 240ml
03 - Olive oil - 60ml
04 - Instant yeast - 1 tbsp
05 - Sugar - 1 tbsp
06 - Salt - 1 tsp

→ Cheese Topping

07 - Feta cheese - 200g
08 - Fresh mozzarella - 340g
09 - Nigella seeds - 1.5 tbsp

→ Za'atar Topping

10 - Extra virgin olive oil - 60ml
11 - Za'atar spice mix - 7 tbsp

# Let's Cook:

01 - Stir the yeast into the warm water and let it sit for 3 minutes. Combine one cup of flour, sugar, and the yeast-water mixture in a bowl. Cover the bowl and let it rest for 10 minutes.
02 - Mix in the remaining flour, olive oil, and salt until a dough forms. Knead it by hand for 3 to 4 minutes. Cover the dough and allow it to rise for 30 minutes.
03 - Stir together the olive oil and za'atar in a bowl. In a separate bowl, mix the feta and mozzarella cheeses.
04 - Split the dough into 10 even-sized balls. Use a floured surface to roll out each ball into a very thin flatbread. Place them on floured baking trays.
05 - Spread the za'atar mixture evenly over 5 flatbreads, leaving a small edge around the border (about 0.5cm). On the other 5, distribute the cheese mixture and sprinkle with nigella seeds.
06 - Preheat your oven to 190°C. Arrange one baking tray on the bottom rack and another on the middle rack. Bake for 12–15 minutes until the bottoms are golden. Rotate the trays during the last few minutes of baking. For the cheese-topped ones, place the tray under the broiler briefly to brown the top.
07 - Take the flatbreads out of the oven and cover them right away to keep them soft.
